Watercolor sketch of the seed head of a Western Salsify (Tragopogon Dubius). It is somewhat similar to that of the common dandelion, but much larger and can be up to 4 inches across. The new shoots, flower buds and flower stalks are all edible. Yellow Salsify is from Europe and has spread all across North America. It was probably brought as a food. It also goes by the name of Goats Beard. The name “salsify” means “a plant that follows the sun,” aptly named because open flowers point towards the sun and follow it across the
sky, often closing by late morning or early afternoon.
